onion (1 large or a couple smaller ones. or heck, 2 large–make a lot of onions if you want!)
here’s what you’ll do
Thinly slice the onion(s) (but not too paper thin, you want the onions to still have some texture and not completely melt away when they caramelize). Add some butter/olive oil (or a mix of both) to a skillet and add the onions. Move them around, keep the heat between low and medium & let the onions caramelize slowly.
While the onions are caramelizing, (while keeping an eye on them and giving them an occasional stir) wedge the radicchio, and bring a pot of water to boil for the orzo.
When the water is boiling, generously salt it, and add the orzo. While the orzo is cooking, heat a skillet (or grill pan if you have it) lightly oil, and add the radicchio. Let the radicchio hang out until it’s charred, then flip and char the other side.
When the orzo is done (and the onions should have finished caramelizing around the same time) drain the orzo & then combine with the onions. Pour on to a platter (or bowl) and add the radicchio. Sprinkle with feta & olives and dig in.
