all the basics, no silly gadgets

I’m a notorious over packer. So, when I hear about not wanting to buy a lot of kitchen tools because of having to pack up and move around I get it, really really get it. That’s why I have condensed everything into one box’s worth of kitchen stuff (ok, and maybe a tote bag of spill-overs. I tested this and everything fit in a standard moving box except the small food processor.) We’re not talking major appliances, but these basics are basic for a reason—they are truly essential for making everything in this book, doing it well, and doing it safely and with confidence.

  • Cutting board (or 2—a larger and a smaller. Wooden is great and can also double for serving boards)
  • knives (best you can get) fully steel.  (cooks, paring, serrated)
  • A honing steel
  • 11-12″ cast iron skillet

  • 8-10” frying pan (non stick or not)
  • sauce pots (small (2qt) medium 3-4qt) and stock pot)

  • Pot fork

  • measuring cups and spoons
  • nesting mixing bowls
  • pepper mill
  • potato masher
  • long-handled spoons (slotted and solid)
  • Wooden spoon/spatulas (2-3)
  • spatulas (2) (silicon/rubber for bowl-scrapping-outting + metal for flipping and moving)
  • tongs
  • vegetable brush
  • Speed blade (that pivots) vegetable peeler
  • wire mesh strainer
  • Wire whisk
  • Salt cellar
  • Baking sheet
  • Lipped baking tray
  • Baking dish (1 large and small), pottery, glass or enamel–great for fish, roasting chickens, lasagna and other baked pastas
  • Casserole with lid–for stews, soups, curries etc.
